A saddle sack, shown in Season 1's Episode 12, maybe that will help you judge. I don't know if a bit is a coin or not, however. Since in the Gala episode Soarin pays two coins for an apple pie, but in the episode I mentioned earlier, DR. Whoof pays 4 coins for an apple. I think it's safe to say that show-wise they don't really have a real exchange rate.
I'll try and come up with one.

Well, if I may chime in, that was essentially a bushel (in imperial) of apples that were tossed into Bon-Bons saddle bag by Apple Bloom (if memory serves me correctly, could be a half bushel). Which is on average 126 apples, which would run in a agricultural region during season about $14-20 USD. So by an estimated calculation that would place a bit at around 4-5 USD$ or around 3£. Least that is what I have come up with in my half asleep state.
Also Dr. Hoof overpaid by my calculations, though he could of just tossed coins out to get away as quickly as possible from Apple Bloom and therefor didn't pay actual market price.
Personally I just mentally treat bits as one would gold/gil/rpg money in most games as equating to 1 dollar of whatever currency.

Yes he did overpay, Applejack told him he forgot his change. Nice one Mortar, I think I'll go with the 1 bit = 5 USD. Would make it easy to keep track of. LET IT BE SO! (All credit to monetary calculations go to Mortar's either very expansive mercantile knowledge or unearthly boredom.)
